Your second assumption is correct. Overclocking internal gpu is almost always a bad idea as the heat is likely to send your mobile GPU to an early grave.

Those temps are fine. If you can keep under 80c at all times for an intel cpu, there is no need for any upgrade.

I would use msi afterburner to track which part is failing you. I would focus on clockspeed of gpu as its likely the issue.

It's fairly normal for a MacBook to run hot using any of the Adobe suite. It's just very cpu taxing to run those softwares.
