I use to use Aluminum foil to cover the turkey in the oven when cooking. However I noticed the meat would be a dark gray color where the turkey contacted the Aluminum foil. I also noticed the same gray color in turkey meat wrapped in aluminum foil. So, I stopped wrapping any turkey with Aluminum.
