I shop once a month and I first freeze my breads like Italian, (sliced or whole loaf), and Portugese rolls. When I take bread out of the freezer, I make sure to put a paper towel sheet in the plastic bag that it's in. Moisture can develop as the bread defrosts, and that can eventually cause mold to grow. Also, if you don't use bread quickly, you might want to put it in the oven to crisp it up a little. That also retards mold, and obviously keeps bread closer to its original state.
