1. Acer Aspire E 15 E5-575G-57D4 - This laptop is very good option, 8GB RAM, 256 GB SSD and just above $500
2. ASUS ZenBook UX330UA-AH54 - Perfect Alternative, It got same features as Acer.
3. MSI GL62M 7REX-1896US - Third and best option is this.

You cannot upgrade the CPU, it is soldered into the motherboard.

I believe starting with the 5th generation Intel Broadwell CPUs released back in 2014, all mobile CPUs are socket BGA which means they are soldered into the motherboard. There are boutique laptops that used desktop Intel CPUs which can be upgraded, but because they are boutique, they will be pretty expensive.
