Best quality to Convert DVDs to mp4?

I am trying to make a media server, where I store all of my DVD so I can just access them from any computer in the house.
But before I start doing a mass conversion, I thought I would be good to ask around to see what is the best video format and best quality setting, ect to do this.

I would like to keep it to free software
I have been useing handbrake and format factory
I am trying to keep the video quality and the size balanced, I don't want a giant file 4GB+ but I would like to keep the quality up because it will be displaying on a 50" TV. And I also want to keep the 5.1 sound. I was thinking like 1GB per hour of video or something?

I can play about any file type mp4, m4v, mkv, AVI,WMV ect.
