Connecting Alexa Dot to bluetooth-enabled AV receiver

Can I connect Alexa Dot to a bluetooth-enabled AV receiver so that I can play music or internet radio through Alexa with output to wired (non-bluetooth) speakers?

You can. You might be able to pair the Dot with the receiver with bluetooth but using the wired audio output on the Dot is better. Connect it to an unused analog audio input on the receiver.
Turn the receiver on, select that input, and set the volume to where you usually use it with other sources.
Leave the receiver on and use the Dot to start-select-stop your music and control the volume.
