Hi, I have a 17 inch, HP Pavillion, e101sa i5 CPU laptop

I wish to upgrade the cpu, to an i7
I am not sure how the cores work, if its an internal cpu thing, or the Mother board had to be able to use 4 core, but the i5 version uses 2 core.

do you know the best cpu to upgrade it to, so that it will be fully compatible
what is the exact cpu model i should ask for i7-

I think your cpu is a pga or bga socket instead of a lga socket. If that is the case you should take it to a computer shop to do the cpu switch because bga sockets are soldered onto your motherboard. The cpu will control the core count so you should be able to upgrade your laptop. I'm not 100% on this but I'll keep looking for you.
