Does 30 x 2 actually mean 30 watts per speaker or 60 watts per speaker

I have a Simmons drum amp 200 watt it says on the back I can use extension speakers that says 30 x 2

yes that usually means 30W x 2 per speaker (or 60W total output), so any speaker that is 30W or more would be recommended and need a type of cable like this one.

Although I read it's 50W x 2 for that model so maybe err on the side of caution and get 50W+ speakers...

From the owners manual it mentions that these outputs are mids and highs only so you don't need speakers that have a lot of bass. It doesn't say what impedance speakers it will handle so you might want to contact Simmons before buying them.
