If your laptop has RAID support built into its SATA controller you could set up a RAID 0 array and install windows on that. That has the added benefit of giving you greater speed as well. If you don't have raid support you just have to use the second drive as just that, a second drive. You can move easy to manage files, like music or movies on there, etc. Unfortunate lay you can't make a soft RAID array in windows if one of the drives is the boot drive.
