How do I set up my default mail client?

Hello ticirhyrac;

Windows 7 did not ship with an email client included.
But you can get one easily, and for free from Microsoft. And it's pretty good.

Windows Live Mail 2011

Once you've installed the email client follow the setup instructions on your ISP (Internet Service Providers) website.

Besides Live Mail 2011 you can get more free programs from Microsoft in the Live Essentials package.
Windows Live Essentials 2011
Live Messenger, Photo Gallery, Movie Maker and Mail is also included in the big package.
You can choose the ones you wish to install.
