I'm trying to put my number from the iPhone 7 on to the iPhone 8

If the cards are the same size, just move them and contact your service provider to activate it again in the new phone if needed. If they are different sizes, there are cutters and adapters for sale, or simply bring it to your provider store and have them get you a new card.
