Since we have no clue what make, model, or type of equipment you have the only advice is to check the owners manual. If there is a button on the remote that lets you cycle through the surround sound modes and you don't see one that seems to be 5.1 stereo then you don't have that mode.
Is the source media definitely encoded with surround?
Do the source player and receiver *both* have either Dolby or DTS? You might try changing source from PCM to bitstream and see if it makes a difference.
