I have a monitor that doesn't have a speaker jack so I was wondering if I could use HDMI to transmit the sound to a headset

I have an Xbox one connected to my monitor but the monitor doesn't have a speaker jack so I can't hear anything (it sucks) so I was wondering if I could plug in an HDMI and use it to wire up some speakers.

How would you use HDMI to get sound to speakers? What would you connect the HDMI to? If the monitor has no speaker jack connecting to that via HDMI would do no good. If you connected the HDMI to a tv in addition to being connected to a monitor, I believe it would cancel out your monitor and display only on the tv.

You could use one of these to extract the audio from the HDMI

You would need self powered speakers and a convenient volume control since the output to them would be fixed.

That's pretty much the same process that I linked to above, just a different output method, either way would work fine.
