Yes, I have used adapters for these connections quite a bit for headphones and speakers, and get normal stereo sound from them. You may just have a faulty adapter.
What do you mean "converted"? Using an adapter for the 1/4 " to 3.5 mm or did you actually re-wire it? Cable not connected properly or broken is the most likely issue. If you are using a converter, try another one.
