I will be using an older iPad to do my taxes online. What type of security should I install on the iPad in order to keep the information I enter in an online tax prep program safe.?

You don't need anything, the highest risk by far is from someone stealing that info directly from the company you are using, not while you are using the iPad to enter the info.
