can i connect my my stereo speakers from the red and white connection on the stereo docking connection useing optical to rca cable

There is no such thing as a optical to RCA cable, You can't convert a digital audio optical signal to wire without an active converter.
If the speaker are active (they have a power cord) and the TV has an optical audio out then you would need an optical to analog converter. Check the TV manual on how to turn it on and configure it. This is usually a fixed level output so you would need to adjust volume on the speakers rather than the TV remote.
If the speakers are passive you will need an amp with an optical input to drive them.
