Your best bet is to look for the system requirements of other programs you wish to use. They will tell you what hardware is recommended to run with their software.
Typically Intel + NVidia systems are recommended over AMD systems for engineering software.
The only other program that I know for sure I would be running is HYSYS be I haven't been able to find what type of requirements I might need for it.
I guess I would like to know if an Core i5 will handle both well or if I need to get Core i7?

Yeah, an i5 would work just fine! An i7 would treat you better, but if you really think you don't need the extra capability, then you can save some $ and stick with an i5, and it will treat you well.
