The Acer Aspire you suggested seems to be the one I'm looking for. Does 16 gb of ram seem excessive? I feel like something around 8 gb - 12 gb would be enough and a small SSD would be even better.

You can sell 8GB and use that money to get a small (~128GB?) ssd. A ssd is better than 16GB of ram IMO.
how would i go about doing that? actually selling the part? or find another computer that has 8gb ram with an ssd?
You can sell it on craigslist or something like that. Ebay would work too, I guess, but prices would be lower due to shipping charges and fees. I'm currently too scared to sell on ebay in case the buyer says it's not right and opens a dispute (unless I'm wrong and its not possible).
I've been buying and selling on craigslist- and I'm still quite far from reaching college age. Everything has been good. I always bring someone along with me and meet at a crowded place just in case.
A downside of selling is that you have to lower the price below retail prices. For example, if pcpartpicker.com gives the lowest price at $65 usd total (including fees), I would aim to get 10% off $65. I leave at least 10-15% space for people negotiating price, so I list it at ~$75. If they don't negotiate, it's an extra.
If the ram (most) is mac compatible, you can say that.
Did you see how much apple sells 8gb of ram?!? $400 Canadian + 12% tax for 8gb!!!
The ssd slot may be msata, and those ssds are 10% more expensive that 2.5" ones. Maybe you can sell both the hard drive (for $45?) and 8gb of ram and get a 1tb hybrid drive for ~$80.
