Should I get the 11" air

or the 13" pro?

And if I do go for the 13" pro which ssd should I swap it out for?

Definitely go with 13" pro.
You get a significantly faster CPU and a backlit keyboard too.
As for SSD,it depends on your budget.But I've heard that OWC SSDs usually play well with Apple products
