Question Movie surround sound on Yamaha RX-V685 - Can I separate voice from background music or sound?

Hello, I'm new to surround sound systems and was wondering if its possible to separate voice from background music or sound? When I'm watching a movie, I have to turn the volume up to hear the dialog but that will make the music or background sound too loud. I'm using a Yamaha RX-V685 with Polk Audio speakers.
