I have this Panny 50" RPTV. It's great and everything but one thing
that stands out is the neon like color saturation of this unit. Yellows
look like neon yellow, so do the blues and reds. Other high-end RPTVs
don't have color saturation like this. What do you think, is this color
characteristic a design feature or is it something that may be
adjustable through accessing the "hidden" settings on the tv? The
accessible settings for TV are only contrast, r, g, b and brightness.

Did you not watch it before you bought it?!
Offhand, I'd say get used to it...or get rid of it.

I purchased the same unit and love it. There is another accessible setting
you did not mention here, and it is the key to your concerns- COLOR- first
one on the menu of picture adjustments. Try it- you'll like it.

Also, I'm assuming you've taken it out of Dynamic mode. I've found that
Normal or Cinema works best, along with a reduction in the Color setting,
and the Picture setting.

Play around.
