question about recording shows

I have an Insignia flatscreen with an antenna to a window (good reception, some basic channels). Can I still record with a vcr to tape shows?

Your VCR doesn't have a digital tuner in it and there is no way to get an output from the tuner built into the TV.
You could buy a digital converter box to provide the tuner but you won't be able to change channels only set the record time. You would not get HD recording as the converter won't output HD and the VCR wouldn't record it. You would be able to watch one program while recording another.
You could get an ATSC digital tuner with PVR built in. Your recording would be in HD and no more tapes.
