I've used a Galaxy Watch for a long time and never had a Samsung phone and all features work fine. There is no limited functionality at all. The Samsung Galaxy Watches are full Android devices that run standard WearOS apps. Yes there are extra features available such as watch face complications which only work with Samsung watch faces, but that's about it.
