I have speaker wire run behind the walls. All connections, wall plates, subwoofer and receiver are all RCA. Need to know if/how to to connect. My thinking is RCA Male connectors to adapt the speaker wire to the female/female bulkhead RCA at the wall plates - any thoughts?

Solution
Since you are stuck with RCA connections (not the usual way for speaker connections in distributed audio) you will have to attach speaker wire to RCA connectors. Most RCA connectors have to be soldered.
I would replace these plates with ones that are made for speaker wire. These can use bare wire or banana plugs.
Or you could just use a cover plate that hides the hole and allows a continuous run of cable (at least in hidden locations).
