Demon's souls is a Re-make, not a remaster.
There's a definite difference between the two! Take Resident Evil 1998 and Resident Evil Remake.
Nothing what-so-ever disappointing about that, infact, I bought a ps4 on two separate occasions for one game. Once for bloodborne, and once for Read Dead 2 prior to it's PC release.
PS5 for demon's souls and the next god of war.
I don't think 6 'exclusive' titles on launch is disappointing when you can play every other title from previous generations as well.
