Video camera for artist.

I am an artist spending a three month residency in Mexico and am working a lot in video. I wanted to invest in a camera round £750/$1200 that has a high quality auto focus and shoots in hi definition. Ideally it wouldn't be too flashy as I don't want to walk around with something easy to steal. I would like it to be a camera that I could grow into, so as I learn more of the technical side, it can accommodate that.
