Which laptop parts and part pairings are better for video editing?

Hello, I'm looking to buy a laptop (it must be portable) for around 1500€, it occasionally will be used to do medium video editing (1080p, 4k possibly, Adobe Premiere, After Effects, Photoshop), not planning to game on it though.

I've been looking through available options in local stores and found different CPU and GPU pairings, can't decide which is the best and if it would last for 3 years?
Almost every machine will be with 16GB DDR4 RAM, but I can't find the speed of it for most laptops.

The main questions:
Are i7-6700HQ / 7700HQ and GTX 1050 / 1060 overkill?
Are i5-7300HQ / i7-7500U and GTX 950M / 960M enough?
