If you're asking that question, I doubt you're technically proficient to remove a chip. Try to google the specific model of phone you have.

You would have had to install software to find it before it got stolen. Unfortunately it's gone and you'll never get it back. Report it to the police in case they find it as that is your only chance.

I'm not familiar enough with your market to suggest any alternatives for you. Look for at least 8GB i5 8xxx series HQ, and storage space of at least 1TB HDD or 500GB SSD.

1 is better as it has 8GB of RAM, but that SSD is barely enough for just the OS, you will have to replace it. 2 only has 4GB of RAM, not really enough, will need at least 8, but the HDD has 1TB so enough space for what you need. I'd get #1 if those are your only choices, buy a 500GB - 1TB SSD...
