What are you using for the Plex server? Sounds like the server isn't transcoding the content. Plex is designed to play any content on any device by transcoding the content to a type that the client can play.

Sounds to me that the audio port isn't grounded properly so you are picking up interference from other components in the computer. Unless there is another 3.5mm port on the computer then you are pretty much stuck with the hissing unless you can find another interface.

If you can find such a cable give it a shot but since RCA connections are analog and HDMI is digital, more than likely you will need an active adapter. Can't recommend any though since I haven't seen an RCA output device since my childhood days.
