    Is now a good time?

Yeah I would wait. The new lines of GPU's just hitting the market are considerably faster than their predecessors, and at the same or lower cost. Laptops will begin incorporating mobile 10-series GPU's next month and by the end of the year I would expect there will be a whole lineup to choose from.

    Is this ram compatible?

That model uses DDR3 ram, which means no, your motherboard wont support DDR4. According to Crucial, that model Acer only supports up to 16GB of ram on two DIMM slots, so make sure you don't buy more than that. http://www.crucial.com/usa/en/compatible-upgrade-for/Acer/aspire-e5-573g Also, ram...

    Best Value Headphones?

I have these wireless Turtle Beach X32's and they work great. Inexpensive, convenient, and they sound awesome. You can pick them up for under $70 in most places. They can be hooked up to anything, not just an Xbox. http://www.turtlebeach.com/product-detail/xbox-360-headsets/ear-force-x32/58

Is This Laptop Good For Gaming?

You will be able to run them, but like others have said, very low quality and framerates. Those games aren't worth playing unless you can get at least 30fps, and I don't think this specific laptop would do it. The i5 is good starting point, but you'll need a better GPU and more RAM.
