Can I use a bipolar capasitor in place of a polerized one? Or would that cut the uF in half?

I think you mean non polarized not bipolar.
The value is as marked on the cap.
You can't sub a np cap in AC applications.

They are bi polarized muse auido signal path grade caps, and I would be plIng them I'm an auido signal path
