do all hdmi cable produce sound and video?

Yes, all HDMI cables have the video and audio signals directly transported. You cannot have one without the other, so the HDMI cable is almost never the issue when you have just one of the two.

If you're having an issue with the sound, check the settings directly on your source. If on windows, select the HDMI output as the Default Device in the Playback Devices audio settings.

If on a console or DVD set, check the audio settings as Jen_Sai recommended. The audio signal needs to be selected as HDMI on a PS3 for example.

Also, if you use a DVI to HDMI cable, DVI does not normally contain audio, and may be your issue.
