I have a Samsung Galaxy s5 and need more storage. Has anyone installed a 200-256 gb card and successfully filled it with data?

That phone only allows for storage expansion (SD card) up to 128GB. So the amounts you mention won't work for that device. You may, 'may', get said card to install, but it is very unlikely it would allow you to access all the space on it, if it allowed you access to any of it. An on top of that it can lead to files being inaccessible.
