All your personal data and Apps you installed will be removed. Sometimes just uninstalling Apps you don't want or need in Settings>More?Application Manager.

Then, to clean things up, clear out the caché by the same method you were going to use to factory reset but using a different entry in the menu - Wipe Caché. Some Apps go over the top in a clean up but most will behave as before and keep your chosen settings.
