I'm getting a new iPad Air 2 and am giving my iPad mini to my kids. What steps do I need to take

Wipe the mini to factory defaults, you can setup a new Apple ID for your son for the device if you want, or just activate it using yours, but then programs like facetime, etc.. will be run under your account.
