Information about Andriod - TouchWiz, vanilla and stock.

I currently own an iPhone 4 and I'm thinking about upgrading to Galaxy Note 3, and i know it usees touchwiz on top of the stock android.
Could you explain me what TouhWiz is? Can I remove it and install - for instance - HTC One's "TouchWiz" (i dont know what its' name is), Can i put the stock Android - its called vanilla i think, and still use the S pen?
What are the benefits installing stock android without thouchwiz and is it possible?

I'm new to all the Android staff and much explanation is always appreciated.

Yes you can by rooting it then installing HTC Sense

Can i put the stock Android - its called vanilla i think, and still use the S pen?

You can install Stock Android (search for AOSP ROM's) but I am not sure about S pen

Pure Google experience, without any Samsung bloatware (search for AOSP ROM's)
