Laptop Or NUC-like Alternative

This is my system:

ASUS Z1701 PRO GAMING | Intel Core i5 6400 | G.Skill RipJaws V 16GB DDR4 2400 | 250GB Samsung 960 EVO M.2 | Gigabyte 750Ti | Thermaltake 750W | FractalDesign Define R5 | Corsair H75

I'm looking to tone it down to a smaller, less powerful laptop or NUC-like system. I thought the NUC Skull Canyon looks good, but everyone says its a waste.

I'm not a gamer, except for Minecraft. So I don't need a beefy GPU.

I also run Linux Mint 18.2. So, it has to be Linux compatible.

I looked at System76, but they seem to be over-priced...

Price doesn't matter, but keep it under or around $1K.

What about a Shuttle chassis/motherboard? You could keep your CPU, RAM etc. Scale back to a 1030 GPU ...

I hate Shuttle PC's... They just look... boring...
