Was looking at a ROG G752VM with a NVidia 1060 but it took me too long to save up money, so now I am a bit lost on what to choose with all the options out there now. I would like to stay with at least an NVidia 1060 GPU.

Well, I don't see why you couldn't go with another ROG laptop. However these are juicy little gems that I came across after punching in your criteria. Although there isn't a laptop with a blu-ray drive, how about a 4k screen?

https://www.newegg.com/Product/Product.aspx?Item=N82E16834332757 or https://www.newegg.com/Product/Product.aspx?Item=9SIA24G6KB3022

If screen quality isn't as important as storage there is this one https://www.newegg.com/Product/Product.aspx?Item=9SIAEYJ79U1024 of which I own a version of and it is pretty nice. This version has a 2 TB HDD.

I think your best looking Intel 8th gen i7 laptop looks to be https://www.newegg.com/Product/Product.aspx?Item=N82E16834154813 but the SSD is kinda small and the bigger one...

Although, if I were in your price range and had to pick one... it'd be this one https://www.newegg.com/Product/Product.aspx?Item=1TS-001A-004H0

EDIT... and I'm an idiot because I didn't look at the 17" display ones... give me a moment.

EDIT OF EDIT: Ok, found a good 17" screen, though not as nice as some of the 15" ones https://www.newegg.com/Product/Product.aspx?Item=1TS-001A-00997 it is pretty good.
Or better https://www.newegg.com/Product/Product.aspx?item=N82E16834234956
