Needing help with new jumpdrive

Hello,
At the Apple store, I was told that they could upgrade my Iphone operating system, but I might lose everything on my phone.

I bought a lexar jumpdrive to save everything on my phone, in case they do lose stuff in the process. But I don't know how to use is and when. I want to save what is on my Iphone - all the photos, contacts, etc.
