Recently purchased Bitdefender Total Security($24.99) to replace Norton, but having second thoughts after someone mentioned it wasn't safe to use. Several different AV reviews led to me choosing Bitdefender.

Try this to enable Windows Defender in 8.1

I would note that support for Windows 8.1 ended almost three years ago. I'd probably consider, if you're running an activated version of 8.1, upgrading to Windows 10 (still free as far as I know).

I've been perfectly happy with Windows Defender (free with Windows 10)

P.S. FYI - From Best Buy's web site:
Entertainment products
Opened physical copies of computer software, movies, music, video games, books, video game guides and sheet music can only be exchanged for an identical item.

Upon Further Review:

You can receive a refund by requesting it from Bitdefender Account or by contacting refunds@bitdefender.com within 30 days of your initial purchase or of the automatic renewal date.
