You can download these from Dolby but the best thing is to get a high quality samples or get a good DVD surround sound setup disc. The disc will put your system to the max. Most of what you will find on the web is simulated surround, that is why I recommend finding some true discrete samples of 5.1/7.1.

This is awesome, it had me looking around me a few times: http/www.metacafe.com/watch/yt-ErKZP9ZYXtM/surround_sound_5_1_test_virtual_hair_cut_good_quality/
It had me looking around a few times, feeling like an idiot.
These are stereo samples, if this sounds like surround to you, then you probably have virtual surround.
Looking for true 5.1 and 7.1 samples is a real pain in the ass.
Wheres the old school buzzing fly? I remember a surroundtest where the fly really seems to fly arround your head.
But now all they have are PR tests were there are so many sounds at once, you cant tell the precise effect of each surround channel. Thee_Prisoner gave the links for the official dolby test.
If you are looking for some music to test out the system, The Flaming Lips have released a good number of their records in true 5.1. If you've never listened to a full album in true surround, check out either http/www.amazon.com/Soft-Bulletin-5-1-Flaming-Lips/dp/B000DN5W0W or http/www.amazon.com/Yoshimi-Battles-Robots-Deluxe-Edition/dp/B0000B1A2O
