Mainly, they are all about the same and it is cheaper. But this one has enough RAM and dedicated GPU to do some light gaming. The 7500u model just has a higher clock CPU, it is not worth an extra $120. It is a dual core CPU, so video editing will be a challenge.
The 8250u is a 4 core/8 thread CPU. But with integrated graphics and 4gb of RAM, those will be your bottlnecks in most cases. The extra threads will help with video editing, over the other CPUs, but you may have issues due to limited RAM.
