I have a MacBook Pro Mid 2012 2.5 GHz i5, 4 G Ram. Can I upgrade from factory 5400 RPM hard drive to a 7200 RPM, I know I can put a flash drive and that is a faster data that a 7200 RPM so I can't understand why 7200 RPM won't work but it's not listed for it.

Yes you can as long as it is a 2.5" SATA drive. Your read rates will go up quite a bit, about 40 to 50%. So it should feel faster.
