8k/3d/360 video - Ryzen vs I7 - RX 580 vs Nvidia 1080

I'm about to build a new rig specific for 8k/3d/360 video. Reaching out to see if any of you can give guidance:

1) RX1700 vs I7-7700: would you recommend AMD or Intel. Ryzen seems to be doing much better in multi-threaded apps and kills the I7-7700 in Cinebench multi thread. Not sure how that translates over to 8k/3d/360 stiching and rendering.

2) Nvidia 1080 vs Ryzen rx 580: The inventory on the RX580 is still bone dry from all the crypto mining. Since a used RX580 is going for $400 I'm thinking about buying a Nvidia 1080. Not sure if 1080 is appropriate for stiching/editing this level of video.

3) Lastly throwing one last thing into the mix. PCIE NVME SSD vs standard SSD. I'm assuming I'd get major benefit from 32gb throughput but would like to know from others.

The r7 will be vastly better than the i7 for video encoding.
1080 is much stronger than rx 580, but it depends on the software you use to encode the video.
PCIE NVME may matter for shortening the time it takes to encode as well, so you aren't held back by data writing speeds.
