Audio from tv to stereo

I have the converter from laptop to HDMI but I want to hook up my stereo as well so what if I hook up rca out put to the aux then plug the aux cord into the stereo will it still work

yes that will work just fine.

If your HDMI output to your monitor/tv has audio and the monitor/tv has audio output that will also work - mine has digital output (optical, some have RCA coax) so that would be preferred (as digital is cleaner signal) to your stereo.
