Is it possible for a Word document to install viruses on a non-jail broken iPhone and have full access to all files (without those pop-ups asking for permission to photos, etc of course)? Just wondering in case I open a word document from an email.
Yes and no. It can definitely infect files you use, but unless the macro was built specifically for iOS the payload will be inert. Just don't download sketchy files

Ok. How would it access files outside the app though?
It won't. What it can do is replace your default template so any new files also get infected, but that's about it unless it's made for iOS
I think the question OP had then becomes "if it is made for iOS?"
I would imagine that the sandboxing is very strong; it should be pretty limited. But viruses have never been known to abide by limitations if there's a workaround.
