Bad news: 2 channel audio can't be converted or 'decoded' to provide 5.1. The original recording and source must be multi-channel. There are different listening modes on your unit. There's one called "AllCh Stereo", where the audio is played through the surround speakers. This is not 'surround sound' but simply L+R sent to the surround speakers. Any other mode that sends signals to your surrounds will be a simulation, possibly like the mode "Studio-Mix" for example. There's no mention if any signal is output to the center channel. Experiment to find something that may be acceptable.

No problem. Here's another way to appreciate/ understand audio: From a reproduction standpoint, the objective is to reproduce sound the way the artist and producer intended. With good quality 2 channel recordings and decent speakers, properly placed and toed in with the tweeters as close to ear level as possible, the sound stage can be much wider than the speakers. You can actually close your eyes and hear sounds where there are no speakers and sounds coming from between them, as if from a center channel. Properly set up, 2 channel audio can be great and actually sound like surround.

Although it won't be quite as good all AVRs have surround modes such as Dolby ProLogic2 music to extract out of phase information in the recorded and provide a surround sound effect. How well it works will depend on the content. Some receivers will have DSP modes to provide an more dramatic surround effect which you may like. Try different surround modes. The owners manual will have an explanation of how each works.
