so like an idiot i followed the apple hype train and got myself a iPhone 7 only to realize i don't know anything about Bluetooth headphones....

I'm looking for something balanced, good low's mid's and high's. If possible something audiophile level. I've been doing research and most people generally point towards the Sennheiser Momentum 2.0. however these are I believe 2015 headphones? possibly? I was also looking at their PXC 550 which are newer but not entirely convinced on buying.

If you have any suggestions please tell me and explain why, If there is anything better than the momentum 2.0's please post your opinions.

You're going to need to probably wait or do more research on exactly what bluetooth apple is using for the 7.

I know FOR SURE it doesn't use aptX, pretty sure it doesn't use A2DP either.
It might have some kind of proprietary compression though, and a set compatible with that is going to be key.

Bluetooth is extremely fast and could probably handle the bandwidth of even raw audio... However... the audio codec used is extremely lossy, and THAT is the problem with bluetooth audio.
