How do I record the person that I am messaging with, without them knowing, I believe I am being done that way

If it's on Android there are apps that do that...or they have access to your Facebook account...Change your password and check your phone privacy (witch apps are allowed to do what).

Not sure why you are doing this and depending on country make sure you follow the laws otherwise any recording may not be usable.
