I would like to connect my Samsung smart TV using HDMI cable to my Sony amplifier

Model names of TV and amplifier?
If both of them support ARC, then you can do that.

Normal way of connecting would be with digital audio cable (either toslink or coax). This depends on inputs/outputs available.

If the TV has HDMI-ARC you can use an HDMI-ARC audio extractor to provide a compatible audio output for the Sony.
If the TV has a digital audio output (usually optical but sometimes coax) then a digital to analog converter will provide an analog output for the Sony,
Check the TV manual on how to use either one.
